Dark Bread Flour Mixture Item 0750
Ingredients:

| 500g dark bread flour mixture 0750 |
|
| 350ml lukewarm water |
|
| 1 packet of dry yeast or 1 cube of fresh yeast |
|
| 50g melted butter |
|
| 50g grated cheese for the dough |
|
| 50g grated cheese to sprinkle |
|
| 1 egg |
Procedure:
Mix the flour and dry yeast. Put the water, egg and butter in a bowl, add the flour mixture and use the hand mixer / kneading hook to prepare the yeast dough. Leave the dough covered for approx. 30 minutes to rise. Subsequently, knead again and mix in the cheese. Put the dough on a surface sprinkled with rice flour, divide into approx. 100g using a dough card and form approx. 9 smooth rolls. Put the rolls on a tray covered with baking paper, coat with whisked egg yolk and sprinkle with cheese. Cover the rolls with a moist cloth and leave to rise for approx. 10-15 minutes. In the meantime, preheat the oven. Baking: E-oven 200°C, hot air 180°C for approx. 20 minutes.
